I love my 2006 GS450h, but the seat is just a tad too high. Most of the time the top of my head is touching the ceiling. I can lower the back rest, but this is far from a comfortable driving position.

I had a look at the rail mounting brackets & thought that I might be able to get a metal fabricator to make a pair for the rear of the seat that are approx 1" lower. This would mean that the rails wouldn't be level from front to back as they would be at a very slight angle as a result of the height reduction of the anchoring brackets.

Am I daft?

I don''t know how practical or realistic your idea is, but be careful of the angle it will cause. I had a car once where I couldn't tilt the seat down enough at the front, which resulted in a lot of discomfort on long journeys.

You might want to tilt the front of your seat up an inch and see how that feels on a long journey before doing anything, as you might end up solving one problem but creating another.

Just how tall are you lol?

My mate is 6' 8" and he wasn't touching the ceiling with the seat all the way down.
Not sure how reclined the seat was. Perhaps check around the mechanism and make sure something
isn't stopping the seat from going all the way down?

The GS mk4 has more room anyway and sunroof does not rob as much space than it did on GS mk3, because in GSmk4 the roof comes out when opening, whereas in GS mk3 it goes inside.

But indeed you might be right - if it is tall driver in mk3 with sunroof, that may have something to do with headroom.
