Going to look at an rx400h tomorrow with a view to buying it.  It has just dawned on me that it could be quite difficult to test the aircon in cold weather.  Does anybody know any good strategies for doing this?

Should demist. Sit in the car with engine off until it all steams up. Then when you put it on it should demist quickly as it dehumidifier the air. Put it on internal recirc to make sure it's not being dried by outside air.

I believe the a/c chiller shuts off at temps below approx 5c so no dehumidification if it's really cold outside?

It does you're right but not sure what that temp is.

Just checked my handbook and it states

"When the outside temperature falls to nearly 0°C (32°F)
The dehumidification function may not operate even when is pressed or “A/C” is
selected."
